“Focaccia” is a yeast filling with toppings.


Focaccia – yeast bread without any fillings on the surface (toppings) or with fillings that are baked in Italy. The simplest filling is olive oil or salt, but there may be more complex options – herbs, cheeses, tomatoes, olives, onions, fruits, etc.

Focaccia is round or rectangular, thin or thick, it all depends on the baker’s preferences. Some authors believe that focaccia is the forerunner of pizza. By the method of preparation, it is almost identical to pizza, but only without a specific filling.

In today’s Italy, focaccia is considered the oldest universal form of pizza, which was the usual food for peasants and warriors of antiquity.

You will need:

Yeast – 2 teaspoons
Sugar – 1 teaspoon
Warm water – 1.75 cups
Olive oil – 1 tablespoon
Flour – 470 g
Salt – 1 teaspoon
Dry dill – 2 teaspoons
Dry celery – ½ teaspoon

Olive oil – 1 tablespoon
Half tomato
Half red onion
Garlic – 1 clove
Caraway seeds – 1 teaspoon
Fresh thyme


How to cook:

1. Mix yeast with sugar and dissolve in warm water. Add a tablespoon of olive oil. Leave for a while.

2. Mix flour with salt, dill and celery. Make a shallow hole in the flour. If yeast has already begun to work, pour them into a bowl of flour. Knead the dough and leave to rise for a couple of hours. Cover with a towel. Heat the oven to 220 ° C.

3. Divide the dough into 2 parts and roll each ball on a floured powder board.

4. Lay out the rings of onion, tomato, garlic, caraway and thyme. Drizzle with olive oil, leave for another 15 minutes.

5. After that, put in the oven for 10-15 minutes – bake until brown.
