Cupcakes “Red Velvet”

for 12 cupcakes

1 1/4 cup flour (cup 250 ml.)
0.5 teaspoon of soda
3 \ 4 tsp salt
1 tbsp. cocoa spoon
3/4 cup sugar
3/4 cup vegetable oil
1 egg (room temperature)
1/2 cup fat-free kefir (room temperature)
1 \ 2 Art. tablespoons of red food coloring
1 \ 2 tsp table vinegar (9%)
1 \ 3 tsp vanillin

Cream
240 gr. cream cheese
1/2 cup butter at room temperature
1 teaspoon vanilla extract
3 glasses of powdered sugar (I’m not sure here, maybe the author has a typo, I advise you to add not a full glass first)

1. Heat the oven 180 degrees, put muffin tins with paper inserts.
Sift flour, soda, salt and cocoa powder into a bowl, grind butter and sugar in another bowl, add an egg and stir well again, but do not beat well.

2. Mix kefir with dye, vinegar and vanilla, add butter and eggs to the mixture, mix well, divide the mass into 2 parts, add half the flour first, stir with a spatula, add the second half of the liquid mixture and then flour and mix gently, distribute the dough into molds no more than half, bake until tender, until the toothpick comes out dry, ready to cool muffins. If the top of the cupcakes has risen strongly, then it can be cut with a knife.

3. For cream, beat together cream cheese, powdered sugar, vanilla and butter, put the cream in a pastry bag and decorate the cupcakes.
