Pork ribs in soy sauce

Ingredients:
— 800 g of medium-sized pork ribs
— 3 l of water
— 5 cm fresh ginger root
— 3 leeks
— 4 tbsp. spoons of dry wine (red or white, to taste)
— 2 tbsp. tablespoons olive oil
— 4 tbsp. tablespoons soy sauce
— 4 tbsp. sugar spoon
— 2 tbsp. tablespoons white balsamic vinegar
— 2 tbsp. tablespoons sesame oil (optional)
— Salt to taste

Preparation:
1. Pour into a saucepan 3 liters of water and bring to a boil, add 1 tablespoon of salt.
2. Peel and dice the ginger, add half the ginger into the pot (the second half is set aside).
3. Clean and rinse the leeks, cut into rings and also put half in the pan.

4. Add 2 tablespoons of wine and put it in a pot ribs. Reduce heat to low and cook the ribs for about 45 minutes. When the ribs are ready, remove them to a plate covered with a paper towel.
5. Strain the broth through a strainer, you will need about 1.5 cups for cooking sauce.
6. Heat a deep frying pan in 2 tablespoons olive oil over medium heat and brown the ribs on all sides, then remove them again at the plate.
7. Add to the pan, where the grilled ribs, leeks and saute for 2-4 minutes, stirring from time to time. Then add the ginger and cook for another 3 minutes, stirring occasionally.
8. Add 1.5 cups of broth, bring to a boil and reduce heat to boiling sauce slightly. Add 4 tablespoons of soy sauce and 4 tablespoons sugar. Boil until the sugar dissolves.
9. Put the ribs back to the pan, increase the heat and cook the ribs with sauce until the sauce begins to thicken (about 10-15 minutes).
10. Then add 2 tablespoons of white balsamic vinegar, 2 tablespoons of wine and 2 tablespoons sesame oil. Boil for 3-4 minutes, then let stand for 10 minutes and serve.
